Weekly Meal Plan: Lasagna at The Cook Report and Chili at Sally's Baking Addiction

Weekly meal plan: 5 easy vegetarian comfort food meals for fall that even meat-lovers will like

Our all-vegetarian meal plan this summer was a huge hit, so now that the weather's turned cooler we wanted to focus on vegetarian comfort-food meals with this weekly meal plan. From lasagna to chili and pot pie, we've taken our favorite comfort food dishes and given them a vegetarian spin. We promise, you won't miss the meat. (And if you just can't handle it, you can always add meat in.) So grab a pen and stock up on ingredients before the weekend’s over to make this week’s meal-planning so much easier.

Weekly meal plan: Vegetable Lasagna at The Cook Report This layered Vegetable Lasagna at The Cook Report is full of yummy fall veggies, with a creamy and cheesy sauce that will satisfy those comfort-food cravings. If you're feeding picky toddlers, you can pull out some of the cooked veggies and plain pasta noodles before you layer them for an easy "nothing touching" meal. Weekly meal plan: Vegetarian Pumpkin Chili at Sally's Baking Addiction Chili is always a hearty, satisfying meal. And if you're feeding people who expect meat at dinner, it's one of the easiest dishes that satisfy with just veggies. This Vegetarian Pumpkin Chili at Sally's Baking Addiction adds that extra sense of heartiness with the pumpkin in there. It's a perfect fall dinner. Weekly meal plan: Vegetable Pot Pie at Hello Veggie My personal favorite fall comfort meal is pot pie, and this Mushroom and Vegetable Pot Pie at Hello Veggie substitutes oyster mushrooms for chicken. I think my own kids would love having their own individual servings of dinner like this, but if you don't have individual ramekins you could also make a family-size serving in a pie dish.

Weekly meal plan: Ratatouille at Family Style Food Some vegetarian dishes can get really carb heavy, so I like this Baked Ratatouille at Family Style Food in my rotation. This is a colorful, veggie-focused dish that would be great on its own or even served with rice on the side. Weekly meal plan: Butternut Squash Curry Bowls at Spices in my DNA If you're looking for tons of flavor, this Butternut Squash Green Curry Rice Noodle Bowls at Spices in my DNA is one to try. You can layer the squash and other veggies on the noodles, choosing only the ones that any pickier eaters might want -- or even serving them separately from the noodles. For me, adding it all together looks like the perfect cold-weather comfort food to me. Weekly meal plan: Apple Crisp at Evolving Table Does it get better than a perfect Apple Crisp in the fall? This recipe at Evolving Table is rich and spicy, and so easy to make. You just layer the ingredients in casserole dish and let the flavors simmer together. It's the perfect dessert for a tailgating party or dinner around the fire pit outside.
