How to use leftover turkey in 5 delicious ways.

Thanksgiving is over. You successfully cooked a turkey (or someone in your family did), everyone feasted, and now there are leftovers. Lots and lots of leftovers. Since there are only so many turkey sandwiches a person can take, I found five recipes that will help you figure out how to use leftover turkey in the most delicious ways. In fact, you may find yourself wishing that you had even more turkey on your hands. Yup, these are that good. Top image: Leftover Turkey Tinga Sopes via ¡Hola! Jalapeño

A list of leftover turkey recipes would not be complete without tetrazzini. The updated version of Turkey Tetrazzini at Diethood made with fettuccine is definitely the way to go. Pasta is a nice change after a traditional Thanksgiving feast, and you won't have to make a special trip to the store for the ingredients in this recipe.   Cooking for Thanksgiving can be a little hectic, so once the big day is done it's nice to sit down with a cozy bowl of comfort to recover. This Turkey Soup with Root Vegetables at The Roasted Root is a wonderful post-Thanksgiving recipe and a great way to use up the various root vegetables from the week's cooking endeavors, too.   If you really want to shake things up, you have to try the Turkey Tinga Sopes at ¡Hola! Jalapeño. Turkey is stewed in a spicy tinga sauce (that you can easily make mild by reducing or skipping the chipotles), then piled on homemade sopes, which are actually easy to make—although we won't tell if you just use store bought tortillas!   Use up leftover turkey and stuffing, too! These Thanksgiving Leftovers Stuffed Peppers at Bless Her Heart Y'all give a fun Thanksgiving twist to a classic comfort food, and you don't need any fancy ingredients to get this dinner on the table.   These Turkey, Mushroom, and Brie Puff Pastries at An Edible Mosaic are so simple to prepare. All you need is frozen puff pastry and you're on your way. And if you don't have brie on hand, just use cream cheese. Done and done.
