I'm a sucker for anything with chickpeas. In fact, I love them so much, that I'm happy to feature them as the star in any #MeatlessMonday meal, which is why I'm loving this Seven Spice Chickpea Stew with Tomato and Coconut at The First Mess. Unless you keep a very stripped down spice cabinet, you probably have these seven spices on hand. If not, consider buying what's missing, because this dinner will become a weekly staple.

This Fennel and Herb-Crusted Salmon with Garlic Potatoes at Donna Hay looks way too elegant for a Tuesday night meal, but one look at the directions and you'll think better of that. This one-pan dinner is quick and simple. And one-pan. You caught that, right?

My little one's birthday is today (yay!), which marks the beginning of the busiest time of year for me. I go from his birthday, to Halloween, to my mom's birthday, to Thanksgiving, to Hanukkah, to Christmas (yes, we do both), to New Year's Eve, and—no, I'm not done—to my older son's birthday on January 5th. Uh huh. That's why this is the week when I pull my favorite no-cook dinner into heavy rotation. Check out how to make the No-Cook Chicken Hummus Bowl from my cookbook Make It Easy if you can use some no-cook relief too.

By Thursday, it's hard not to pick up the phone to call—or, umm, use my favorite food delivery app—for take out. This recipe for Mongolian Beef Noodle Bowls takes care of that urge with a healthier, quick-cook version of a delivery favorite. Steam some broccoli in the microwave and throw that in the wok, too, for a one-bowl meal.

Can you think of a better thing to cook on Friday night than this Friday Night Pasta at Half Baked Harvest? I can't! And it's not just because it preps in 10 minutes. It's also because it's packed with melty cheese. Enough said.
