Caroline recently tested a recipe that has unexpectedly become a new weeknight favorite: the Instant Pot French Onion Soup at Serious Eats. That's right, friends, French Onion soup that doesn't take tons of time or effort. A true miracle. Check out her review of the recipe and some French onion soup tips and tricks — then get started on your new favorite soup recipe.   Cool Mom Eats weekly meal plan: Tacos de Alambre | Mexico in My Kitchen I'm bringing back #TacoTuesday this week, because look at these Tacos de Alambre at Mexico in My Kitchen. Whoa! You really can't go wrong when you saute steak, bacon, onions, and peppers and melt cheese on top before folding the mixture into a tortilla, now can you? Even better, you can adapt these tacos, popular in Mexico City, using other proteins. Check out Mexico in My Kitchen for Mely's other suggestions and step-by-step photos.   Cool Mom Eats weekly meal plan: Shakshuka | My Big Fat Halal Blog I'm a huge fan of eggs for dinner and there's no more delicious way to serve them than Shakshuka, an Israeli preparation where eggs are cooked in a very simple tomato sauce. This version at My Big Fat Halal Blog takes all of 30 minutes to prepare -- perfect for a Wednesday night dinner -- and can be served as is or, if you eat Feta cheese or yogurt, with either on top and pita bread on the side. Yum!

Cool Mom Eats weekly meal plan: Afghani Chicken Drumsticks | Spice Diary These Afghani Chicken Drumsticks at Spice Diary look absolutely divine and they're the perfect way to urge your family to try something different. The flavors are new, but nothing too crazy, and served up in a most familiar way.  Both the chilies and chili flakes are optional and can easily be modulated so that you can makes these as mild or spicy as you like. And, if you don't like drumsticks, Monica points out that you can make this with other cuts of chicken. Easy breezy.   Cool Mom Eats weekly meal plan: Dad's Friday Night Pasta recipe | Half Baked Harvest I love the idea of this recipe for Dad's Friday Night Pasta at Half Baked Harvest as much as I love the recipe itself. As a parent, I can totally imagine Tieghan's dad whipping this up every Friday night -- a tad differently each time -- dirtying only two pans and feeding his whole family with a most delicious cheesy, baked pasta. If this tastes just half as good as it looks, I may have to adopt his tradition.
