Weekly meal plan: Paleo Mongolian Beef at I Heart Umami This packed-with-flavor Mongolian Beef at I Heart Umami is a great meal for a busy school night. It's just a quick stir fry (and even faster if you prep the veggies ahead of time). This recipe is paleo, but I'd serve it with some rice for our non-paleo eaters...and maybe even swing through our neighborhood Chinese restaurant for some egg rolls on the side. Weekly meal plan: Fish Taco Bowls at 40 Aprons These Fish Taco Bowls with Mango salsa, Chipotle Aioli, and Coconut-LIme Cauliflower Rice at 40 Aprons are one of our family's favorite meals. The charred fish is perfection, and there is so much flavor from the salsa and aioli. In fact, we make a big jar of the aioli to dip sweet potato fries and black bean burgers in later in the week. Switch things up for burger night this week, and try these Cotoletta Milanese Burgers at ChewTown. Or, check out any of our other favorite international twists on the hamburger -- from Korea to Greece -- for an anything-but-ordinary sandwich. Fries are still totally acceptable.

Weekly meal plan: Salad bar! Photo by Jasmin Schreiber via Unsplash Kristen shared her family's idea of doing 80s salad bar night (you know, those massive salad bars with 100s of items on them), and we think it's brilliant! Check out our recent post on 20 unique salad toppings you probably haven't thought of adding to your salads as you prep your dinner, then grill some chicken or make sandwiches to go with them for a full meal. Weekly meal plan: Chilean Sea Bass at Glitter and Graze If you're planning a traditional fish dinner for your Good Friday dinner, may we recommend this Pan Seared Chilean Sea Bass at Glitter and Graze. The white meat is perfect for kids who may turn their nose up at fish, and it's a light start to the weekend for those of us planning a big brunch on Sunday. For Easter brunch, we love this pretty Pink ombre cake at Woman's Day. While it will require a bit of baking, the decorating is so easy. And if you don't have those pretty birds on hand, then you could use fresh (edible) flowers instead.
