After Thanksgiving, I love to use that turkey carcass to make soup. Earlier this year, I stumbled across this Lazy Leftover Turkey Soup Slow Cooker Recipe at The Lazy Slow Cooker and bookmarked it specifically for this point in time. I love that it uses up not just the leftover turkey bones I shoved in the freezer, but most of the ingredients I have left in my fridge. Just throw everything into the slow cooker and let it do it's magic. And because you will have a lot of extra soup, grab these Souper Cubes and freeze individual servings for quick winter lunches.

If you still have a ton of leftover turkey meat, you can use it up in these Easy Rotisserie Chicken Tacos from A Family Feast. If not, a rotisserie chicken is easy schmeezy. My favorite thing about this meal is that you bake all 12 tacos in on dish and just set it on the table served family style.

This very simple, very delicious Crockpot Potato Soup from The Girl Who Ate Everything is a perfect weekday meal. If you have a ton of potatoes laying around after Thanksgiving, you can use those in place of frozen potatoes. If not, use the frozen ones because it just makes your life that much more simple.

I have been so eager to give this recipe for Mac and Cheese Stuffed Acorn Squash from Jar of Lemons since I saw the recipe pop up in my Instagram feed, and next week is the moment. I happen to have about 4 delicata squash sitting on my counter that I will sub for the acorn squash, which I think will be just fine, but will report back. If you are meh on using ground turkey, you could use any ground meat or ground meat substitute you prefer.

I'm rounding out the week with a crowd pleasing pot of this One-Pot Spaghetti from Five Heart Home. I love this one pot version of a classic recipe that not only reduces the clean up, but in my opinion results in a tastier bowl of pasta because all the starchiness of the noodles goes right into the sauce. Serve it with a loaf of french bread to scoop up all the goodness, and a bright green salad.
